I suppose it only makes sense when your master distiller’s inspiration is Jimmy Russell

bringing back the fruity subtlety in a long and elegant aftertaste with a balanced and fresh acidity

P.Vallee Champagne Blanc de Noir NV campo-viejo cooled and put straight intoGolden yellow. On the nose, it shows great complexity with notes of honey, quince and candied citrus. On the palate, it is soft, ample and delicate. Fresh and long finish with citrusy notes. Excellent as an aperitif, but also paired with fish and tartare.
