The finish whips into line with a slight astringent wiry-wild thyme hit and grape fruit acidity

this wine is aged for 7 months in manzanillo butts under the yeast cap (velo flor)

giving a unique persistance to the wine

Musk, fennel, aniseed, rose petals crushed in a small childs hand. Salts and minerals wrought wistfully from the earth. Deep and dark fruit aromatics that never the less cannot but help display a late summers playfulness. Plush but pert fruit flavours; textural in feel, but long in length.
